This hard red spring wheat was grown by a friend and colleague in North Dakota. I had it shipped in bulk to Cincinnati, then cleaned. It is ground in small batches on a stone mill at a local bakery then stored refrigerated to preserve the quality. Despite being whole wheat it has a nice, fine, soft texture.
